6 cups fresh spinach leaves
3 cups boiling water
1/2 cup grated cheese
1 cup panko breadcrumbs
1/4 cup coriander
Salt and pepper to taste
Grease a large non-stick baking tray with olive oil spray, set aside.
Place spinach leaves in a large bowl and cover with boiling water, stirring until leaves have wilted (about 15 seconds). Drain.
Place spinach on a chopping board and chop finely. Transfer to bowl. Add eggs, cheese, breadcrumbs, coriander, salt and pepper. Mix well to combine.
Form into golf ball-sized balls and place on baking tray. Cook in a 180c oven for 15-20 minutes until golden brown. Serve immediately.
