3 large golden delight potatoes, peeled
2 litres vegetable oil to deep fry
Sea-salt flakes, to serve
- Preheat oven to 150°C. Line a large oven tray with paper towel. Place a wire rack over the tray. Using a mandolin or sharp knife, very thinly slice potatoes.
- Pour oil into a large deep saucepan until 5cm deep. Heat to 180°C on a cook’s thermometer, or until a cube of bread turns golden in 30 seconds. Cook potato, in batches, for 3-5 minutes or until golden and crisp. Transfer to prepared tray and put in oven to keep warm. Sprinkle chips with sea-salt flakes to serve.
