This honey and garlic-flavoured popcorn cauliflower is one quick and easy vegetarian dinner that will really impress!
1/2 head cauliflower, cut into florets
Salt & pepper
3 tablespoons olive oil
For the sauce:
4 tablespoons honey
2 garlic cloves, crushed
1 teaspoon onion powder
1 1/2 tablespoons soy sauce
1/2 tablespoon siracha sauce
6 tablespoons water whisked with 1 tablespoon of cornflour
Chopped coriander to serve
Line a large baking tray with baking paper. Add cauliflower pieces, and spread out over bottom of pan. Sprinkle with salt and pepper. Add olive oil and toss to combine so the cauliflower is well coated. Place in a 200c oven for 15 minutes
To make sauce, in a medium saucepan add honey, garlic, onion powder, soy and siracha and heat over medium heat, stirring to combine. Add water and cornflour mixture, whisk until sauce thickens. Remove from heat.
Transfer cauliflower to a large bowl and pour sauce over the top. Toss to combine.
Serve in bowls, topped with chopped coriander.
