If you want to get the kids into the kitchen, look no further than this fun recipe for a great starting point. Using pre-purchased cooking dough, it's easy, not too time consuming, and (hopefully) results in minimal mess. Follow our easy guide to make your own!
Rainbow fruit cookie dough

- 450g tube refrigerated chocolate chip cookie dough, we used Aunt Kath’s
- 250g spreadable cream cheese
- 1/4 cup icing sugar mixture
- 1/2 teaspoon vanilla extract
- 3 1/2 cups assorted fresh fruit, such as blueberries, mandarin, pineapple, strawberries and kiwifruit
Step 1: Slice and arrange cookie dough
Preheat oven to 180°C (160°C fan forced). Line a large flat baking tray with baking paper. Slice cookie dough into 5mm thick slices and arrange on baking tray in a rainbow shape. Using your fingertips, push the dough together to form a neat rainbow shape. Bake for 13-15 min. Allow to cool.
Step 2: Beat mixture and spread over biscuit
Meanwhile, place cream cheese, icing sugar and vanilla into a bowl. Using electric beaters, mix until light and fluffy. Spread icing evenly over cooled biscuit dough using a spatula.
Step 3: Prepare fruit and start at bottom with blueberries
Prepare fruit, then working in rows, top cookie with two rows of blueberries.
Step 4: Continue to place fruit and chill
Then add rows of pineapple, mandarin, strawberries and kiwifruit to make rainbow pattern as shown. Chill for 30 min.
Simply cut into slices and enjoy!
