It might look magical, but luckily making your own unicorn ice-cream is a lot easier than it seems! Follow our guide and get the kids involved in choosing their own colours for this delicious, creamy, marbled ice-cream.
Unicorn ice-cream
Serves: 12
Prep time: 10 mins
Freeze overnight
Ingredients:
- 600ml thickened cream
- 395ml can sweetened condensed milk
- 2 teaspoons vanilla extract
- 3 food colourings, we used pink, yellow, blue
- small silver cachous, to decorate
Method:

Step 1: Beat cream
Place cream, condensed milk and vanilla into a large bowl. Using electric beaters, beat until mixture is thickened and forms soft peaks.

Step 2: Add colours and mix
Divide mixture between 3 bowls. Add 3-4 drops of your chosen food colouring to each bowl. Using a whisk, carefully mix the colourings into each one until combined.

Step 3: Swirl colours
Take a 1.5L freezer proof container. Spoon the coloured mixtures into the container, and swirl with a blunt knife to marble. Cover and freeze until firm.

To serve:
Et voilà! Serve scoops in waffle baskets and top with cachous if desired.
