Ingredients
185 ml canned light coconut milk
80 g sugar
500 ml freshly brewed coffee, chilled
Method
- Combine 125ml (½ cup) of the coconut milk and 1 Tbsp of the sugar in a bowl. Pour mixture evenly between 8 x 80ml (1⁄3 cup) ice-block moulds. Freeze for 2 hours or until firm
- Combine coffee, remaining coconut milk and sugar in a bowl. Pour over the coconut layer. Cover with lids. Freeze overnight or until firm.
