Iced coconut latte ice pops
Cook: 400 Minutes - easy - Serves 8 - Vegetarian - Vegan - nut-free - dairy-free - egg-free

We dare you to find an iced coffee that's this carb-smart and tasty. You'll never be short of a refreshing moment this summer with these sweet treats in your freezer.

Ingredients

185 ml canned light coconut milk

80 g sugar

500 ml freshly brewed coffee, chilled

Method

  1. Combine 125ml (½ cup) of the coconut milk and 1 Tbsp of the sugar in a bowl. Pour mixture evenly between 8 x 80ml (1⁄3 cup) ice-block moulds. Freeze for 2 hours or until firm
  2. Combine coffee, remaining coconut milk and sugar in a bowl. Pour over the coconut layer. Cover with lids. Freeze overnight or until firm.
