2 tsp crushed garlic
2 tbsp garam masala
600 g chopped chicken thighs
½ cup water
¼ cup roughly chopped coriander
1 tub low-fat yoghurt
1 package pappadums to serve
- Roughly chop 2 onions and spray with olive oil. Add to a large frying pan and cook for 2-3 min. Add 2 teaspoons crushed garlic and 2 tablespoons garam masala. Cook for 1-2 min.
- Add 600g chopped chicken thighs and stir to coat with spices. Add ½ cup water, cover and simmer for 15 min. Stir through ¼ cup roughly chopped coriander. Serve with low-fat yoghurt and pappadums.
