250 g cherry tomatoes with grape tomatoes
1 large ripe tomato, sliced into rounds
300 g fior di latte cheese, sliced into rounds
1 Tbsp extra virgin olive oil plus extra to serve
12 basil leaves
Sea-salt flakes and freshly ground black pepper, to season
1 bottle balsamic vinegar to serve
- Slice ½ of the assorted tomatoes into quarters and the remaining into rounds.
- Arrange large sliced tomato on a serving platter, alternating with rounds of cheese. Top with assorted tomato and drizzle with oil. Scatter with basil and season with salt and pepper. Serve with balsamic vinegar and extra oil on the side.
