120 g lettuce leaf mix
1 Lebanese cucumber, halved lengthways, sliced
2 tomatoes, cut into wedges
½ red onion, thinly sliced
¼ cup pitted kalamata olives
¼ cup red wine vinegar
½ cup extra virgin olive oil
Sea-salt flakes and freshly ground black pepper, to season
- Combine lettuce, cucumber, tomato, onion and olives in a large bowl.
- Put vinegar and oil in a jar and secure lid. Shake well to combine. Drizzle over salad and season with salt and pepper. Toss to combine, then serve.
