¼ cup pesto
6 thick slices Vienna loaf, toasted
60 g Danish salami slices, quartered
⅓ cup smooth ricotta
4 Colby cheese slices
70 g sliced mortadella
2 tbsp tomato relish
40 g baby rocket leaves
- To assemble, spread pesto over two of the toast slices. Top evenly with salami. Spread over ricotta. Top each with another toast slice.
- Divide cheese, mortadella, relish and rocket over the top. Place remaining toast slices over rocket.
- Using a serrated knife, cut sandwiches in half diagonally.
