Ingredients
2 x 72g packets chicken-flavoured 2-Minute noodles
6 eggs
½ cup self-raising flour
2 cups shredded savoy cabbage
3 green onions, thinly sliced
1 small carrot (70g), peeled, coarsely grated
1 tablespoon fresh ginger paste
1/3 cup vegetable oil
Tonkatsu sauce and Kewpie mayonnaise, to serve
Extra thinly sliced spring onions, to garnish

Cook noodles with flavour sachets according to packet directions. Drain. Cool slightly. Cut into shorter lengths with kitchen scissors.

Whisk eggs in a large bowl. Whisk in flour until smooth. Stir in noodles, cabbage, onions, carrot and ginger. Season with salt and pepper.

Heat oil in a large, non-stick frying pan over a medium heat. Add about ¼ cup of noodle mixture to pan, spreading slightly to form a fritter. Repeat to make another three fritters.

Cook for about 3 minutes on each side, or until golden brown. Remove. Drain on absorbent kitchen paper.

Arrange fritters in a single layer on an oven tray. Lightly cover with foil. Place in a very slow oven (120C) to keep warm. Repeat with remaining mixture to make 12 fritters.

Serve fritters topped with a dollop of tonkatsu sauce and mayonnaise. Garnish with extra spring onions.
TIP! You will need about ¼ of a savoy cabbage for this recipe. They have a mild taste with wrinkly leaves. Tonkatsu is a Japanese barbecue-style sauce available at supermarkets.
