¼ red onion, very thinly sliced
1 pinch caster sugar
1 splash red wine vinegar
1 large red capsicum
250 g halloumi
4 brioche burger buns, toasted
3 tsp jerk seasoning or Cajun seasoning
2 ¼ tbsp mayonnaise
50 g rocket
- Put the onion in a bowl with a good pinch of sugar and a splash of vinegar. Toss and leave while you make the burgers.
- Cut the capsicum into 4 wide squareish pieces. Rub with oil and grill until charred and softened a bit.
- Slice the halloumi into 4 wide pieces. Rub with oil and the jerk seasoning, then grill until soft and golden.
- Spread a little mayo on the bun bases, add some rocket then top with capsicum and a slice of halloumi. Drain the onions and add to the burgers then serve.
