½ x 250g packet Nice biscuits
½ cup shredded coconut, toasted
50g unsalted butter, melted
395g can sweetened condensed milk
½ cup lime juice
125g white marshmallows (1 ½ cups), chopped
300ml tub thickened cream
1 tablespoon icing sugar mixture
Toasted shredded coconut and thin lime wedges, to decorate
Process biscuits in a food processor until finely crushed. Add coconut and butter. Process until just combined (it should still have some texture to it).
Divide biscuit mixture evenly among six tall serving glasses (1½-cup capacity).
Place condensed milk and juice in a medium bowl. Stir until well combined. Stir in marshmallows. Spoon evenly over biscuit layer in glasses. Refrigerate for 4 hours, or until set.
Beat cream and icing sugar in the small bowl of an electric mixer until soft peaks form.
To serve, spoon whipped cream over lime layer. Decorate with coconut and lime wedges.
