85g packet lime-flavoured jelly crystals
395g can sweetened condensed milk, chilled
¾ cup unsweetened coconut milk, chilled (See Tip)
¾ cup no added sugar pineapple juice, chilled
½ cup fresh lime juice
½ cup vodka
2 cups ice cubes
Cut lime into six thin slices. Cut slices in half. Cut the remaining piece of lime into wedges.
Place 1 tablespoon of the jelly crystals in a large bowl. Spread remaining over a small plate.
Run lime wedges around the rim of six serving glasses (2/3-3/4-cup capacity). Dip rims into jelly crystals on plate to coat. Chill glasses in the refrigerator for 5 minutes. Reserve any remaining jelly crystals on plate.
Pour condensed milk, coconut milk, juices, vodka and ice cubes into the bowl with the jelly crystals. Whisk until well combined and mixture is cold. Strain into a large jug.
Pour cocktail evenly into chilled glasses. Sprinkle with some of the reserved jelly crystals. Decorate glasses with lime slices. Serve immediately.
