Ingredients
1 tsp sesame oil
1/2 cup diced bacon
1 and a 1/2 cups spicy kimchi
400 grams udon noodles
1 tbs soy sauce
1 cup water
1/2 cup grated cheddar cheese + 1/4 cup for serving
To Garnish: spring onions, dried shallots, black sesame seeds and 2 egg yolks
Method

On medium-deep pan on medium-high heat add in sesame oil and bacon, stir.

Add in kimchi and soy sauce, cook for a few minutes.

Pour in water and stir.

Add in noodles and stir, add cheese and cover for a couple of minutes.

Serve into bowls and garnish with spring onion, sesame seeds, fried shallots and place egg yolk into the middle.
