500 g packet microwaveable new red potatoes
¼ red cabbage thinly sliced
1 small diced onion
1 tbsp white wine vinegar
4 kielbasa (Kransky sausages) halved lengthways
1 Lebanese cucumber sliced
2 tbsp mayonnaise
1 tbsp fresh dill chopped
4 long crunchy bread rolls
- Cook the potatoes in the microwave as directed on the packet. Remove and let cool slightly before slicing. Alternatively, steam or boil potatoes until tender.
- Meanwhile, heat 1 tablespoon of oil in a large frying pan over medium heat. Add sliced cabbage and onion and cook for 6-8 min or until tender. Stir in the white wine vinegar and season to taste. Transfer to a plate, keep warm.
- Meanwhile, heat another large frying pan over medium heat and spray with oil. Cook kransky sausages for 3-4 min each side, until lightly golden and heated through. Toss the potato slices with cucumber, mayonnaise and dill. Season with crackled black pepper. Serve kransky sausages in rolls topped with cabbage and a side of potato salad.
