2 x 400 g packets ready-made lamb meatballs
¼ cup pine nuts
½ teaspoon cumin seeds
1 garlic clove, crushed
500 g tub hummus
1 packet pita bread rounds cut into wedges to serve
- Preheat oven to 220°C (200°C fan forced). Line a large baking tray with baking paper. Place the meatballs onto a lined baking tray.
- Bake in the oven for 20 min, turning halfway through cooking, or until golden brown and cooked through. Drain on paper towel and let cool slightly.
- Heat 1 tablespoon oil in a frying pan until hot. Add pine nuts, cumin seeds and crushed garlic. Cook for 1-2 min or until pine nuts are golden. Remove from the heat and season with pepper.
- To serve, spoon hummus onto a serving platter. Top with cooked meatballs and sprinkle with pine nut mixture. Serve with pita bread wedges for dipping. Garnish with fresh mint sprigs if desired.
