500 g lamb mince
1 small red onion, finely chopped
1 garlic clove, crushed
¼ cup finely chopped fresh coriander
1 tsp garam masala
1 tsp ground cumin
½ tsp dried chilli flakes
1 egg yolk
Salt, to taste
14 x 12 cm-long bamboo skewers
Caramelised lemon wedges, tabouli and hummus, to serve (optional)
- Place mince in a large bowl with onion, garlic, coriander, garam masala, cumin, chilli and yolk. Season with salt. Mix well to combine.
- Shape 2 tbsps of lamb mixture around each skewer into a sausage shape.
- Heat a large, lightly oiled, non-stick frying pan over a medium heat. Add skewers in two batches. Cook for about 10 minutes, turning occasionally, or until cooked through.
- Serve skewers with caramelised lemon, tabouli and hummus (optional).
