1.25 kg sweet potato, peeled, cut into 4cm pieces
2 tbsp olive oil
2 tbsp maple syrup
2 long red chillies, deseeded and finely chopped
Salt and pepper, to taste
¼ cup sour cream
¼ cup finely chopped fresh chives
- Boil, steam or microwave sweet potato until tender. Drain.
- Place sweet potato in a large roasting pan with oil, maple syrup and chillies. Season with salt and pepper. Toss to coat. Arrange in a single layer.
- Cook in a hot oven (200C) for about 20 minutes, or until golden. Remove from oven.
- Transfer sweet potato to a large bowl. Add sour cream and chives. Coarsely mash with a fork until just combined. Serve hot.
