Mash potato doesn't have to be dull with this recipe, delicious with a succulent lamb shank.
600g of potatoes
Pinch of salt
2 tbsp olive oil
5-6 spring onions trimmed and chopped
Scrub 600g new potatoes. Put in a saucepan, cover with boiling water and bring back to the boil. Add salt and cook for 15 mins, drain and set aside.
Heat a frying pan for 2 mins, add 2 tbsp olive oil, 15g butter and fry 5-6 trimmed and roughly chopped spring onions until soft.
Slice potatoes into the pan then mash. Fry, then season well.
