Ingredients
1 large onion
210 g jar Massaman curry paste
400 ml coconut milk
½ cup water
500 g bag mini potatoes
500 g raw peeled prawns
½ cup chopped fresh coriander
Method
- Finely chop onion. Cook in a large, oiled non-stick frying pan over a medium heat until soft. Add curry paste. Stir for 1 minute.
- Add milk and water. Bring to boil. Simmer for 7 minutes, or until thickened.
- Cut potatoes into quarters. Boil or microwave until tender. Add to pan with prawns. Simmer for 5 minutes, or until prawns are cooked. Stir in chopped coriander.
- Garnish with extra chopped coriander. Serve with lemon wedges and pappadums (optional).
