Ingredients
2 cups gluten-free flour
2/3 cup golden granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
8 tablespoons melted butter
2 eggs
1 teaspoon vanilla extract
2/3 cup sour cream
1 cup mashed banana
1/2 cup chocolate chips
1/2 teaspoon ground ginger

Grease and line a non-stick loaf tin.

Combine flour, sugar, baking powder, baking soda and salt in a large bowl and mix. Add butter, eggs, vanilla extract and sour cream and stir to combine. Add banana, mix again. Add chocolate chips and ginger, mix again.

Pour batter in loaf tin. Smooth batter out, making sure to spread into all corners of the tin.

Place in 175-degree oven for 45 minutes. Allow to cool slightly. Slice and serve.
