The dish is brilliant in its simplicity and offers a neat vegetarian version of the classic Bolognese sauce. All she does is cook onions in oil, chop zucchini and bouillon cubes and add it to the pot and cook for 4 hours. This slow-cooking process turns the zucchini into an irresistibly creamy sauce.
