Ingredients
500g frozen hash browns
1kg small chicken thigh fillets, trimmed, halved
35g sachet taco seasoning
2 tablespoons olive oil
1 large onion, coarsely chopped
1 red capsicum, thinly sliced
1 green capsicum, thinly sliced
Chopped tomato, chopped cucumber and coarsely chopped fresh parsley, to serve

Place hash browns in a single layer on the microwave turntable, Microwave on High (100%) for about 5 minutes, or until thawed and hot. Remove. Break into large pieces.

Toss chicken with seasoning and oil in a large roasting pan. Toss well. Add onion and capsicums. Toss well. Spread evenly. Top with hash browns.

Cook in a very hot oven (220C) for about 30 minutes, or until chicken is cooked and hash browns are crisp.

Sprinkle with combined tomato, cucumber and parsley.
TIP! Taco seasoning can be replaced with fajita or burrito seasoning. Frozen potato gems also make a great topping on this dish instead of hash browns.
