1 honeydew melon
4 small bamboo skewers
½ cup Midori
1/3 cup vodka
1 ½ cups apple juice, chilled
½ cup loosely-packed fresh mint leaves
1 small Granny Smith apple, quartered, cored, thinly sliced
2-3 cups ice cubes
2 cups sparkling natural mineral water or lemonade, chilled
Extra fresh mint leaves, to decorate
Using a melon baller, scoop out 12 balls from honeydew. Thread three balls onto each skewer (or wooden popsicle sticks).
Combine Midori, vodka and juice in a medium jug. Refrigerate for 1 hour.
Divide mint and apple among four tall glasses (1 2/3-cup capacity).
Place 4 ice-cubes in each glass. Pour about ¾ cup Midori mixture into each one. Top up with mineral water or lemonade. Serve with honeydew skewers. Decorate with extra mint.
