Mix-and-match brunch waffles

Start with a basic homemade waffle recipe, then pop delicious toppings in bowls – think bananas, bacon and maple syrup – and let everyone build their own.

Ingredients

Basic waffle recipe

250 g plain flour

1 tsp baking powder

25 g golden caster sugar

2 eggs, beaten

475 ml milk

2 tbsp sunflower oil, plus extra for the waffle iron

Topping suggestions

crispy bacon

fried eggs

avocado slices

chopped chives

maple syrup

chocolate sauce

whipped cream

toasted pecans

sliced bananas

Method

  1. Put all the dry ingredients into a bowl with ½ tsp salt. Mix the eggs, milk and oil in a jug. Gradually mix the wet into the dry ingredients to make a batter.
  2. Brush a waffle iron lightly with oil (or use spray oil if you have it). Pour the batter into the waffle iron and cook for 4-5 minutes until golden and cooked through. Repeat with the remaining batter. Let everyone choose their own toppings.
