240 g can red kidney beans drained
2 tblsps fajita spice mix
1 clove garlic crushed
1 fresh corn cob kernels removed
1 avocado diced
½ small red onion finely chopped
1 long green chilli seeds removed and finely chopped
½ red capsicum cut into 1 cm pieces
½ cup fresh coriander chopped plus extra to serve
1 tomato cut into 1cm pieces
1 tblsp lime juice
230 g packet white corn chips
½ cup grated cheddar cheese (60 g)
½ cup sour cream (125 g)
- Place beans, spice mix and garlic into a large bowl. Mash roughly to combine. Add corn, half the avocado, onion, chilli, capsicum, coriander, tomato and juice. Gently stir to combine.
- Divide corn chips among four serving plates. Spoon over bean mixture. Sprinkle with cheese. Top with sour cream and remaining avocado. Garnish with coriander.
