2 large limes
60 ml (¼ cup) diet lime cordial
750 ml (3 cups) chilled soda water
½ cup mint leaves
12 frozen blackberries
ice cubes to serve
- Cut 1 lime in half crossways, then very thinly slice. Cut the second lime into small dice. Using a mortar and pestle, crush diced lime to extract juice. Reserve juice.
- Combine cordial, soda water and reserved lime juice in a jug. Divide lime slices, diced lime, mint leaves, blackberries and ice cubes between short serving glasses.
- Pour soda water mixture into glasses. Stir with a swizzle stick. Serve.
