100 g butter, chopped
1 ½ cups self-raising flour
⅓ cup rolled oats
⅔ cup brown sugar
¾ cup raisins
3 ripe medium-sized bananas, mashed
¼ cup maple syrup
1 banana, sliced lengthways
- Preheat oven to 180°C (160°C fan forced). Lightly grease and line an 11 x 21cm loaf pan. Place butter and flour into a bowl and rub together with your fingers until it resembles breadcrumbs.
- Add oats, sugar and raisins and mix. In a jug, combine mashed bananas, eggs and maple syrup. Mix in flour until just combined. Spoon into pan and top with banana slices and a few oats.
- Bake for 1 hr or until cooked when tested with a skewer. Cool in pan for 10 min, then on a wire rack. Serve as is or toasted with ricotta cheese.
