24 medium fresh oysters in the half shell
crushed ice, to serve
⅓ cup grapeseed oil (or other mild flavoured oil, not olive oil)
¼ cup red wine vinegar
1 tbsp olive oil
1 tsp finely grated ginger
1 tsp caster sugar
1 tsp soy sauce
1 tsp lemon juice
- Place all the dressing ingredients in to a bowl and whisk until well emulsified.
- Arrange oysters on a bed of crushed ice on a serving platter and spoon a little dressing over each oyster.
- Serve immediately with the remaining dressing on the side.
