1 cup fresh passionfruit pulp (See Tip)
½ cup fresh lime juice
2 x 750ml bottles non-alcoholic ginger beer
4 cups ice cubes
Lime slices, to serve
½ cup caster sugar
8 x ½cm thick slices, peeled fresh ginger
To make ginger syrup, stir sugar and ½ cup water in a small saucepan over a low heat until sugar is dissolved. Add ginger. Bring to a simmer. Gently simmer for about 5 minutes to allow ginger to infuse in the syrup. Cool to room temperature.
Transfer syrup into a large jug. Stir in passionfruit pulp and juice. Cover. Refrigerate.
Just before serving, pour passionfruit mixture into a drink dispenser with ginger beer. Stir gently to combine. Add ice cubes and lime slices.
