Passionfruit and Lime Spritzer

Passionfruit and Lime Spritzer
Prep: 25 Minutes - Cook: 10 Minutes - Easy - Makes 10 litres

TIP! You will need about 12 passionfruit for this recipe. Chill all ingredients before you start. Recipe can be doubled or tripled, depending on the size of the drink dispenser.

Ingredients

1 cup fresh passionfruit pulp (See Tip)

½ cup fresh lime juice

2 x 750ml bottles non-alcoholic ginger beer

4 cups ice cubes

Lime slices, to serve

GINGER SYRUP

½ cup caster sugar

8 x ½cm thick slices, peeled fresh ginger

Method

  1. To make ginger syrup, stir sugar and ½ cup water in a small saucepan over a low heat until sugar is dissolved. Add ginger. Bring to a simmer. Gently simmer for about 5 minutes to allow ginger to infuse in the syrup. Cool to room temperature.

  2. Transfer syrup into a large jug. Stir in passionfruit pulp and juice. Cover. Refrigerate.

  3. Just before serving, pour passionfruit mixture into a drink dispenser with ginger beer. Stir gently to combine. Add ice cubes and lime slices.
