250 g packet mini jam rollettes
⅔ cup thickened cream
3 teaspoons caster sugar
2 fresh passionfruit
¼ cup lemon curd
- Slice each mini jam rollette into 3 pieces and place onto a serving platter.
- Whip the cream and caster sugar until thickened. Fold through the passionfruit pulp.
- Spoon lemon curd onto the top of each slice and top with passionfruit cream and a mint leaf if desired. Cover and chill until required.
