4 eggs, beaten
1 cup caster sugar
finely shredded zest of 2 large lemons
½ cup fresh lemon juice
1 cup fresh passionfruit pulp
250 g butter, chopped
- Combine all the ingredients in a large, heavy-based saucepan. Stir continuously over a low heat until thickened, about 5 min.
- Pour into warm sterilised jars then cool, seal and store in the refrigerator until required. It will keep for about 4 weeks.
