2 garlic cloves, crushed
1 red onion, finely diced
150 g button mushrooms, sliced
500 g extra lean or Heart Smsrt beef mince
1½ cups tomato juice
⅓ cup tomato paste
2 tablespoons chopped fresh parsley
1 tbsp or less ground cayenne pepper to taste
395 g packet rigati pasta
- Heat 1 tablespoon olive oil in a large frying pan over medium heat, add garlic, onion and mushrooms, cook for 4 min. Add mince, cook for 5 min, breaking up any lumps.
- Add tomato juice, paste, parsley and cayenne pepper. Simmer for 10 min. Season to taste with pepper.
- Meanwhile, cook pasta in a large saucepan of boiling water as directed on the packet. Drain and place into serving bowls. Spoon over meat sauce and top with parmesan cheese. Serve with crusty bread if desired.
