Ingredients
1 cup plain flour
½ cup self-raising flour
1 cup traditional rolled oats
¾ cup raw caster sugar
125g cold unsalted butter, finely chopped
¼ cup crunchy peanut butter
1 egg
½ cup plum jam
½ cup chopped salted peanuts

Grease an 18cm x 28cm rectangular slice pan. Line base and sides with baking paper, extending paper 3cm above pan edges.

Sift flours into a large bowl. Stir in oats and sugar. Rub in unsalted butter with your fingertips until mixture resembles fine crumbs.

Whisk peanut butter and egg with a fork in a small jug. Add to flour mixture. Stir until well combined.

Press two-thirds of the mixture over base of prepared pan. Spread evenly with jam. Add peanuts to remaining mixture. Using clean, dry hands, mix through to form a coarse crumble. Sprinkle over jam.

Cook in a moderate oven (180C) for about 25 to 30 minutes, or until golden brown. Remove. Cool completely in pan.

Using paper as a guide, life slice out of pan. Cut into bars.
