12 Medjool dates (200g), pitted
¼ cup natural almonds
¼ cup traditional rolled oats
½ cup crunchy peanut butter
1/3 cup desiccated coconut
1 tablespoon cocoa powder
Extra 1/3 cup desiccated coconut
Process dates, almonds and oats in a food processor until nuts are coarsely chopped and mixture is combined. Add peanut butter, coconut and cocoa powder. Process until combined.
Roll tablespoons of mixture into balls. Roll in extra coconut to coat. Refrigerate for 2 hours before serving.
