1½ cups self-raising flour
1 tsp baking powder
½ cup rolled oats
300 ml skim milk
½ cup chopped dried pears
½ cup chopped dried dates, pitted
½ cup firmly packed brown sugar
1 tsp ground cinnamon
- Preheat the oven to 160°C (140°C fan forced). Lightly grease and line the base of a 9 x 20cm, loaf pan.
- Soak the rolled oats in the 300ml of skim milk for 30 minutes.
- Sift flour and baking powder into a bowl. Stir in the soaked rolled oats, dried fruits, sugar and cinnamon. Mix well. Spoon into prepared pan and level the top.
- Bake for 40-45 min, until a skewer inserted into the loaf comes out clean. Allow to cool in the pan for 5 min before transferring to a rack to cool completely. Serve with pears, ricotta and honey if desired.
