A light, cook-free open faced sandwich made with pear, avocado and rocket leavee.
4 slices of sourdough bread
1 ripe pear
½ cup baby rocket leaves
50 g shaved parmesan
1 lemon cut into wedges
- Lightly toast 4 slices of sourdough bread. Mash ¼ of an avocado onto each slice. Season with black pepper.
- Slice one ripe pear and place on the sandwiches with ½ cup baby rocket leaves. Top with 50g shaved parmesan. Serve with lemon wedges.
