2 x 25 cm round fresh pizza bases
½ cup hoisin sauce
1¼ cups grated mozzarella
420 g packet ready-roasted Peking duck breasts
5 green spring onions, thinly sliced diagonally
cucumber, peeled into ribbons, to serve
- Place pizza bases on two lightly oiled pizza trays. Divide sauce between bases. Spread evenly over top. Sprinkle ¾ cup of the cheese over both bases.
- Thinly slice duck. Arrange evenly over cheese on bases. Top with onions. Sprinkle with remaining cheese.
- Cook in a hot oven (200C) for about 20 minutes, swapping trays halfway through, or until cheese is golden and bases are crisp.
- Cut pizzas into wedges. Serve with cucumber ribbons.
