4 flat mushrooms (90g each)
¼ cup pizza sauce with garlic and herbs
¾ cup grated pizza cheese
½ small green capsicum, finely chopped
½ x 80g packet sliced pepperoni
Trim stems of mushrooms. Place, cut-side up, on a large oven tray lined with baking paper. Spray with cooking oil.
Brush pizza sauce over the cut-side of mushrooms. Sprinkle with cheese. Top with the capsicum and pepperoni slices.
Cook in a hot oven (200C) for about 10 to 12 minutes, or until the cheese is melted and mushrooms are tender.
Serve with mixed salad leaves (optional).
