500 g pack of gnocchi
½ cup basil pesto
200 g halved grape/cherry tomatoes
400 g seasoned and roasted pumpkin pieces
⅓ cup soft-style feta
1 bunch basil to garnish
- Prepare a 500g pack of baby gnocchi as directed and drain well. Return to the pan and toss through ½ cup basil pesto and 200g halved grape/cherry tomatoes.
- Top with 400g seasoned and roasted pumpkin pieces and scatter with ⅓ cup soft-style feta. Garnish with basil leaves, serve with a green leaf salad.
