30 g caster sugar
1 cup self-raising flour
½ cup milk
1 tbsp hot water
20 g butter, melted
Jam and cream, to serve
- Place egg and sugar in a medium bowl. Whisk to combine.
- Whisk in flour and milk alternately to form a thick batter, then whisk in combined water and butter.
- Heat a large, lightly greased non-stick frying pan over a medium heat. Spoon level tablespoons of mixture into pan, allowing room for spreading.
- Cook for about 2 minutes, or until bubbles form on surface. Turn and cook for 1 minute, or until browned underneath. Remove and cover. Repeat with remaining batter. Serve with jam and cream.
