Pimientos de Padrón
Prep: 5 Minutes - Cook: 10 Minutes - Easy - Serves 4

Pimientos de Padrón is one of the staple tapas dishes of Spain. These little green peppers have a mild, almost grassy, flavour but every now and then you’ll meet a ferocious one – odds
are usually given as one in five.

Ingredients

250g/9oz pimientos de Padrón, leave the stalks on them

2 tbsp light olive oil salt flakes, to serve

Method

  1. wash and drain the peppers, then pat dry with a paper towel. Heat the olive oil in a frying pan and tip in the peppers – they should sizzle immediately. Fry them for approximately 5 mins until they are well blistered and browned.

  2. Drain onto kitchen paper and serve on a plate scattered generously with the flaked sea salt.
