½ cup chilled lemon-flavoured iced tea
½ cup Bickford’s Lemon Juice Cordial
1/3 cup Pimm’s No 1 Cup
6 cups ice cubes
Cucumber ribbons on skewers, to decorate
Place iced-tea, cordial, Pimm’s and half the ice cubes in a blender. Blend until combined. Add remaining ice cubes. Blend until smooth. (Makes 6 cups).
Pour into four serving glasses. Decorate with cucumber ribbons. Serve immediately.
TIP! We used a large 6-cup capacity blender. To make cucumber ribbons, use a vegetable peeler to peel thin, long slices from a Lebanese cucumber. Trim ends and roll up. Secure 2 slices onto each bamboo skewer.
