Cook: 10 Minutes - easy - Serves 4 - Vegetarian - Vegan - gluten-free - nut-free - dairy-free - egg-free

When it's a hot summer's day, what better way to cool down than with a glass of English Pimms? This cocktail recipe ups the ante with lemons & cucumbers.

Ingredients

½ Telegraph cucumber (180 g), trimmed cut into long sticks

1 lemon, sliced

180 ml Pimm's Number 1 Cup

3 cups ice cubes

750 ml bottle lemon-flavoured mineral water, chilled

Method

  1. Cut cucumber lengthways into long, thin sticks. Divide among four tall glasses with lemon slices.
  2. Just before serving, place ¾ cup of the ice-cubes into each glass. Divide Pimm’s over ice. Top with mineral water.
