¾ cup milk
1½ cups self-raising flour
1½ cups of pizza cheese (a mix of cheddar and mozzarella)
1 cup drained and chopped antipasto mix
- Combine 1 egg with ¾ cup milk in a jug, mixing well. Sift 1½ cups self-raising flour into a bowl, add 1½ cups of pizza cheese (a mix of cheddar and mozzarella). Add egg and milk mixture with 1 cup drained and chopped antipasto mix. Mix until just combined.
- Spray 6 holes of a Texas muffin pan (¾-cup capacity) and divide the mixture between the holes. Bake in the oven at 200°C (180°C fan forced) for 18-20 min or until cooked through.
- Serve warm with a Tomato, Olive & Bean Salad and a crispy prosciutto slice. Accompany with some caramelised onion relish.
