1.5 kg Cream Delight potatoes washed and chopped
250 g cherry tomatoes halved
4 spring onions finely sliced
275 g jar garlic mayonnaise
¼ cup milk
- Boil or steam potatoes for 10-12 min until tender. Place in a large bowl and allow to cool. Add tomatoes and spring/green onions.
- Whisk mayonnaise with milk, season with pepper to taste. Pour over the potato and toss to combine. Cover and chill until required.
