1.2 kg piece seedless watermelon, peeled
1 medium Lebanese cucumber (140g)
1 kg cooked tiger prawns, peeled with tails intact and deveined
1 medium red onion, halved, cut into thick wedges
½ cup small fresh basil leaves
100 g Greek feta, crumbled
¼ cup olive oil
2 tbsp balsamic vinegar
1 small clove garlic, crushed
Salt and pepper, to taste
- To make dressing, combine all ingredients in a small jug. Whisk well.
- Cut watermelon into 1cm-thick slices. Cut away rind. Cut each slice into wedges. Cut cucumber in half lengthways, then thinly slice. Transfer to a large bowl.
- Add prawns, onion, basil and feta to watermelon. Toss to combine.
- Transfer salad to a serving plate. Drizzle with dressing.
