Ingredients
2 tsp canola oil
1 tbsp Sherry vinegar
¼ tsp wholegrain mustard
2 tsp maple syrup
⅓ small red cabbage, shredded
6 ready-to-eat dried apricots, cut into strips
1 eschalots, chopped
6 walnut halves, broken into pieces
2- 3 tbsp roughly chopped parsley
100 g piece of ham, pulled into pieces
Method
- Mix the oil, vinegar, mustard and maple syrup in a bowl. Stir in the cabbage, apricots, eschalot, walnuts and parsley. Toss well, then gently fold the ham through.
