Pulled ham & maple mustard slaw
Cook: 8 Minutes - easy - Serves 2 - dairy-free - egg-free - pregnancy-safe

Crunchy red cabbage, studded with juicy apricots and drizzled with tangy maple mustard dressing. A colourful lunch or satisfying side salad.

Ingredients

2 tsp canola oil

1 tbsp Sherry vinegar

¼ tsp wholegrain mustard

2 tsp maple syrup

⅓ small red cabbage, shredded

6 ready-to-eat dried apricots, cut into strips

1 eschalots, chopped

6 walnut halves, broken into pieces

2- 3 tbsp roughly chopped parsley

100 g piece of ham, pulled into pieces

Method

  1. Mix the oil, vinegar, mustard and maple syrup in a bowl. Stir in the cabbage, apricots, eschalot, walnuts and parsley. Toss well, then gently fold the ham through.
